This vegan Almond Butter & Jelly Oatmeal Bake tastes like a time machine back to childhood, with a delicious twist. It’s made with simple, wholesome ingredients, and is the perfect oatmeal recipe to fuel your day. Plus, this oatmeal bake is vegan, gluten-free, and incredibly simple to make!

This Almond Butter and Jelly Oatmeal is baked to perfection and is FULL of almond butter flavor, healthy fats, and loaded with protein. It’s the a delicious twist on the classic PB&J combo and is a breakfast that you don’t want to miss. If you love the combo of peanut butter and jelly, then you’ll love this almond butter and jelly combo even more!

Vegan Oatmeal Bake Ingredients

For this vegan oatmeal bake recipe, you only need a few ingredients!

  • Oats: I used old fashioned rolled oats for this oatmeal recipe, but quick oats will work to. However, I do not recommend using steel cut oats, because it turns out too thick.
  • Almond Butter: It wouldn’t be an Almond Butter & Jelly Oatmeal Bake if there wasn’t any almond butter. I recommend using almond butter that is made with 1 ingredient, almonds!
  • Banana: Adding half of a ripe banana to the recipe makes this breakfast sweet. Also, the more ripe the banana, the sweeter your breakfast will be.
  • Non-dairy Milk: To mix up the oats. I used unsweetened almond milk, but any non-dairy milk will work.
  • Maple Syrup: Although you do not need to add more sweetness, but maple syrup does a good job of making this oatmeal tastier.
  • Vanilla Extract: Just a little for some extra flavor.
  • Baking Powder: Since this is an egg-free baked oats recipe, baking powder will help insure a nice and fluffy texture.
  • CinnamonThe spice of cinnamon takes this oatmeal bake to the next level.
  • Flaxseeds: Flaxseeds are loaded with nutrients, high in omega-3 fats, rich in dietary fiber, and you can’t even taste them. They are completely optional, and be substituted with chia seeds, so no problem if you don’t have them…yet!
  • Jam: Add any jam or jelly you like! I love making my own strawberry jam and it’s so easy to make!

Maple syrup in a small glass bowl, flaxseed, baking powder, and cinnamon in a small glass bowl, almond butter in a small glass bowl, and strawberry jam in a small glass bowl, 1/2 cup of almond milk, 1/2 cup rolled oats, and 1 ripe banana. How to make Vegan Baked Oats

  1. Prep your pan. Grease a small baking pan or 1-cup ramekin coated with nonstick cooking spray or coconut oil and preheat your oven to 350 degrees F.
  2. Mix the wet. In a medium bowl mash the banana and then mix together all of your wet ingredients until there aren’t any large lumps of almond butter.
  3. Stir in the wet. Fold in all of the dried ingredients until well-combined and pour mixture into your pan.
  4. Swirl the remaing almond butter & jelly. Drop tablespoons of jam and the remains almond butter onto the oatmeal bake and gently swirl with a knife.
  5. Bake & serve. Bake it up for 20-25 minutes, until it’s barely golden brown, and optionally top with extra almond butter & strawberry jam, once it’s cooled, and enjoy!

Customize your Oatmeal Bake

  • Mix up the Nut Butter. If you’re not into almond butter or are allergic, feel free to use creamy peanut butter, cashew butter, SunButter, or your favorite nut or seed butter.
  • Add Fresh Fruit. Try adding a few diced strawberries to the recipe to make it exceptionally tasty. It’s also delicious with sliced/chopped bananas on top or baked right in.
  • Go Nuts. This Almond Butter & Jelly Oatmeal Bake would also be delicious with some chopped almonds, stirred in the batter or sprinkled on top.

Oatmeal Bake FAQs

Can I make this oatmeal bake in the microwave?

Although I have not tried it myself, I think it would work! Follow steps 1 – 4, but microwave for 2-3 minutes, until toothpick comes out clean.

What type of baking dish to use?

I used an 8 oz ramekin, but any oven-safe dish will work.

Can I double this recipe?

Absolutely! Just double the amount of ingredients and make multiple servings at once!

Can I make it in advance?

This oatmeal bake is a great option for meal prep. Once baked, cooled, and covered, you can either store it in the fridge for 4-5 days or in the freezer for 1-2 months.

  • Fridge: Microwave for 30-45 seconds or place back into the oven at 350ºF for 10 minutes.
  • Freezer: Microwave for 60 seconds or place back into the oven at 350ºF for 15 minutes.
