  • Oats: Rolled oats, also known as old fashioned oats, are the best kind of oats to use for overnight oats, because they absorb the liquid the best. However, if you only have quick oats on hand, you can use them too!
  • Apple: It wouldn’t be apple pie oatmeal without an apple. I used a Honeycrisp apple, because I wanted my apple pie sweet. However, you can use your favorite kind of apple. I recommend Fuiji, Red Delicious, or Gala, for a sweeter oatmeal option and a green apple for a more tart flavor!
  • Spices: Cinnamon and nutmeg are a must for apple pie flavor!
  • Maple SyrupTo sweeten up your apple pie oats. I recommend real maple syrup.
  • Coconut Yogurt: A few tablespoons of coconut yogurt, makes this overnight oats recipe extra creamy.
  • Non-dairy Milk: Any non-dairy milk will work. I personally used unseewetend almond milk in this recipe.
  • FlaxseedsFlaxseeds are loaded with nutrients, rich in omega-3 fats, rich in dietary fiber, and you can’t even taste them. They are completely optional and can be replaced with additional chia seeds, so no problem if you don’t have them…yet!

How to make overnight oats

Overnight oats are probably the easiest and fastest breakfast to make. Thus, they’re the perfect breakfast for when you’re on the go. All it takes is few easy steps to prepare this Apple Pie Overnight Oats. What is more, is that it’s way easier to make compared to a homemade apple pie.

For the Apples:

  • Add the apple ingredients to a small saucepan and bring to a light simmer. Cook, stirring often, until the liquid is more or less gone. This should take about 10 minutes on medium-high heat. Let cool and reserve 1/2 of the sautéed apple to use as a topping.

For the Oats:

  • Mix the wet ingredients. In a medium bowl, mix together coconut yogurt, almond milk, and maple syrup until well combined.
  • Add the dry. Stir in rolled oatsflaxseeds, and spices.
  • Add 1/2 of the sautéed apples. Mix inn 1/2 of the sautéed apples to the oat mixture.
  • Refrigerate. Transfer to a glass jar or container and place in fridge for 4 hours or overnight.
  • Enjoy. Once ready to serve, add the remaining sautéed apples, along with your favorite toppings, and enjoy!

Substitutions

  • If you don’t have flaxseeds, you can use chia seeds, or completely omit.
  • Use any of your favorite non-dairy milk. I used unsweetened almond milk, but you can certainly use coconut or cashew milk.
  • This overnight oats recipe calls for thick coconut yogurt, I recommend the Culina brand. However, you can use any non-dairy yogurt for this recipe.
