Yes, you could actually indulge in a slice of apple pie or two for breakfast, but in this apple pie, I’m talking more specifically about Caramel Apple Pie Oatmeal.
This Caramel Apple Pie Oatmeal is easy, delicious, and takes oatmeal to whole new level. It’s filled with sweet apples, Medjool dates, and spiced with cinnamon. It is then topped off with the most incredible caramelized apple and pecan mixture, a dollop of cool coconut yogurt, and a drizzle of pecan butter.

This Caramel Apple Pie Oatmeal tastes like a classic dessert, but is healthy enough to enjoy for breakfast!
By adding Medjool dates to the recipe, there is no need to add any additional sweeteners to the oatmeal base. Also, adding Medjool dates transpires the most delicious texture and taste to achieve a sweetness similar to caramel.

Types of oats to use
This delicious apple oatmeal bowl can be made with rolled oats, steel cut oats, or even quick oats.
Rolled Oats: Rolled oats, also known as old fashioned oats or whole oats, are my favorite type of oats to cook with. Their texture is great and they cook relatively quickly, compared to steel-cut oats.
Steel-Cut Oats: Steel-cut oats, usually take much longer to make, about 20 minutes. However, they contain more fiber.
Quick Oats: Quick oats are soft in texture and cook extremely quickly. They’re the best type of oats to use in the microwave versus cooking on the stove.
Whichever type of oats you select, before preparing, be sure to read the package instructions, for the liquid oat ratio, because the amounts may vary.

Caramel Apple Pie Oatmeal Ingredients
- Oats: I used old fashioned rolled oats, nevertheless steal-cut or quick oats work as well. However, be sure to read the package instructions for the liquid oat ratio and the cook time, because they will vary. This recipe is written for old fashioned oats.
- Apple: It wouldn’t be apple pie oatmeal without an apple. I used a Honeycrisp apple, because I wanted my apple pie sweet. However, you can use your favorite kind of apple. I recommend Fuiji, Red Delicious, or Gala, for a sweeter oatmeal option and a green apple for a more tart flavor!
- Medjool Dates: Adding dates to the recipe transpires the most amazing texture to achieve the tastes of caramel. Also, be sure to make sure that your dates are pitted.
- Pecans: In addition to the apple, we’ll be caramelizing them too.
- Maple Syrup: To caramelize the apples and pecans.
- Cinnamon: To spice up the caramelized apples and pecans, as well as the oatmeal.
- Coconut yogurt: For topping, but any non-dairy yogurt is fine.
- Pecan butter: Optional for topping, but recommended. Use pecan butter for your sweet potato breakfast bowls. It should be made with 1 ingredient, pecans!
- Non-dairy milk: Use your favorite non-dairy milk. I used unsweetened almond milk.
- Flaxseeds: Flaxseeds are loaded with nutrients, high in omega-3 fats, rich in dietary fiber, and you can’t even taste them. They are completely optional, and be substituted with chia seeds, so not worry if you don’t have them…yet!

How to make Apple Pie Oatmeal for breakfast
Making oatmeal for breakfast is super simple, but this recipe has a 2 extra steps, that probably takes no time at all, and is totally worth it.
Oatmeal
- To begin, in a high-speed blender, combine the non-dairy milk and dates. Blend on high until smooth.

- Pour into a medium saucepan, along with the cinnamon, flaxseeds, rolled oats, and diced apples.
- Bring to a simmer over medium heat. Cook for about 5-7 minutes stirring frequently until most of the liquid is gone and the texture is very thick.

Caramelized apples and pecans
- While oats are cooking, heat a small skillet over medium heat. Add a splash of water, maple syrup, diced apple, and cinnamon. Cook for 3-5, stirring occasionally. Stir in pecans and mix.

Pour into a bowl, top with caramelized apples, non-dairy yogurt, a drizzle of pecan butter, maple syrup, and a sprinkle of cinnamon, if desired, and enjoy!
