  • Cashew Butter: Cashew butter is my favorite nut butter to use when making this cookie dough recipe, since I find it’s the most flavor neutral and gives the most accurate chocolate chip cookie dough flavor. However, you can use whatever nut butter you have on hand!
  • Cashews: Crushed cashews provide the a delicious and nutty taste and texture to this overnight oats recipe. If cashews aren’t your thing, use your favorite kind of nuts.
  • Maca Powder: Adding some maca powder is the secret ingredient to make this overnight oats recipe over the top. Plus, maca powder is highly nutritious, loaded with vitamins, and has so many benefits.
  • Maple SyrupTo sweeten up your cookie dough oats. I recommend real maple syrup.
  • Vanilla Extract: Just a little, but you can totally omit.
  • Dark Chocolate Chips: It wouldn’t be cookie dough, if there weren’t any chocolate chips. Be sure your dark chocolate chips are dairy-free.
  • Chocolate Covered Chia Seeds: Adding chia seeds are an amazing addition to this overnight oats recipe. Plus, chia seeds are high in omega-3 fatty, magnesium, and so many other benefits. However, if you don’t have chocolate covered chia seeds, you can replace with regular chia seeds.
  • Cacao Nibs: Cacao nibs are unsweetened, crushed cacao beans that add a nice, chocolatey flavor in addition to the dark chocolate chips and the chocolate covered chia seeds
  • Non-dairy Milk: Any non-dairy milk will work. I personally used unsweetened cashew milk in this recipe.
  • FlaxseedsFlaxseeds are loaded with nutrients, rich in omega-3 fats, rich in dietary fiber, and you can’t even taste them. They are completely optional, so no problem if you don’t have them…yet!

Overnight oats are probably the easiest and fastest breakfast to make. Thus, they’re the perfect breakfast for when you’re on the go. All it takes is few easy steps to prepare this Cookie Dough Overnight Oats.

To begin, in a medium sized bowl, add the non-dairy milk, maple syrup, vanilla extract, cashew butter, crushed cashews, non-dairy dark chocolate chips, cacao nibs, chocolate covered chia seeds, and flaxseeds. Mix well until you achieve cashew butter milk.

Next, mix the oats and cashew milk together in the mixing bowl.
