This pistachio ice cream smoothie bowl seriously tastes like a pistachio milkshake (added bonus: it’s good for you). The texture is smooth, thick, and creamy because of the frozen banana, pistachios, almond milk, and Medjool dates. Besides the pistachios, almond extract is the essential ingredient to achieve the pistachio ice cream flavor. Above all though a high-speed blender is necessary for that ultra-creamy consistently. Best of all though, it’s an easy smoothie recipe that only takes 5 minutes to make!

  • Frozen Cauliflower: I know it sounds crazy, but adding frozen cauliflower is where the thick texture comes from. Don’t worry, you can’t taste it. I recommend using store bought frozen cauliflower, or even frozen cauliflower rice, because it blends up nicely.
  • Medjool Dates: Fruity, sweet, make the whole mixture a little thicker and creamier. Also, be sure to make sure that your dates are pitted.
  • Pistachios: The essential ingredient to making this pistachio smoothie bowl. Unsalted (and hopefully pre-shelled for the sake of your fingers!) pistachios blend right in with the other ingredient for color, extra creaminess, and most importantly flavor.
  • Almond Extract: Adding almond extract to this pistachio smoothie transpires the flavors to next-level delicious. Trust me! The almond almond extract makes this smoothie bowl taste like pistachio ice cream. YUM!

  • Start off by only adding 1/4 cup of non-dairy milk and only add more if needed.

  • Use a high-speed blender, with a tamper, to ensure that your smoothie bowl achieves a thick and creamy texture.
