- Noodles: I love these pad Thai noodles, but you can use a traditional stir fry noodles instead. If you’re having a tough time finding these options, spaghetti or fettuccini is a good replacement!
- Peanut butter: A creamy peanut butter works best due to its runny consistency. I highly suggest using a creamy peanut butter, made with one ingredient, peanuts! Also, if your nut butter is extra runny, the sauce may require less water.
- Soy Sauce: If you are following a gluten-free diet, replace with tamari or coconut aminos instead.
- Maple Syrup: Just a drop of maple syrup adds a subtle sweetness to the sauce.
- Red Chili Flakes: Red Chili Flakes helps to turn up the heat and flavor in the peanut sauce. Use more or less to your preferred taste.
- Lime juice: I recommend adding a spritz of fresh lime juice, but store-bought lime juice works, too.
- Garlic: Fresh minced garlic adds even more flavor to this sauce. Feel free to add more, if desired.
- Vegetables: What are your favorites? You can use any fresh or frozen vegetables of your choosing! I added green onions, carrots, and red cabbage!

- Bring a large pot of water to a boil and cook noodles according to package instructions.
- Meanwhile, mix the creamy peanut butter, soy sauce, maple syrup, red chili flakes, minced garlic, and water together in a small bowl.
- Heat a splash of water in a non-stick skillet on medium-high heat. Add minced garlic, red cabbage, and carrots. Sauté for 2-3 minutes.
- Next, drain the cooked noodles and add to the cooked veggies. Mix together and add the peanut butter sauce, stirring everything together in the skillet.
- Divide between 2 bowls & garnish with additional green onions, red cabbage, and a sprinkle of sesame seeds, if desired!

- Always taste and adjust the sauce if needed. Depending on how much noodles you use, you may need a bit more or less sauce.
- Don’t overcook the noodles! Thicker rice noodles will be more forgiving when overcooked, but thinner rice noodles tend to get a bit mushy when overcooked. Make sure the noodles are still slightly hard in the center before mixing them into the sauce.

- 8oz brown rice noodles
- 2 green onions, chopped
- 1 carrot, shredded
- 1/4 cup red cabbage, shredded
- 1 garlic clove, minced
- Sesame seeds to top
Spicy Peanut Butter Sauce
- 2 tbsp creamy peanut butter
- 1 tbsp soy sauce
- 1 tbsp maple syrup
- 1 tsp lime juice
- 1/4–1/2 tsp red chili flakes
- 1 garlic clove, minced
- 2 tbsp water
Instructions
- Bring a large pot of water to a boil and cook noodles according to package instructions.
- Meanwhile, mix the creamy peanut butter, soy sauce, maple syrup, red chili flakes, minced garlic, and water together in a small bowl.
- Heat a splash of water in a non-stick skillet on medium-high heat. Add minced garlic, red cabbage, and carrots. Sauté for 2-3 minutes.
