Calling all granola lovers! Today I’m bringing you a super easy, incredibly delicious recipe for Vanilla Almond Granola. It’s crunchy, nutty, cinnamon-y, and perfectly sweetened with pure maple syrup. All it takes is just a few simple ingredients to make this flavorful, as well as vegan and gluten-free granola recipe!

  • Almond Butter: Your almond butter should be runny, like a thick liquid, and made with 1 ingredient, almonds! However, you can replace with your favorite nut or seed butter.
  • Almonds: To make this granola recipe even more crunchy, add almonds. Be sure to use roasted and unsalted almonds for this granola recipe.
  • Cinnamon: A few dash’s to make this granola super sweet!
  • Vanilla extract: Just a little, to add some extra flavor.

How to make Vanilla Almond Granola

Believe it or not, granola is actually really easy to make, and this recipe is no different. It just takes a few simple steps to make this granola.

  • Begin by adding rolled oatsalmonds, and cinnamon, to a large mixing bowl. Then stir together.
  • In a separate, microwave safe bowl, combine the almond butter, maple syrup, and vanilla extract. Heat briefly in the microwave for 20-30 seconds, or in a small saucepan, until warm, but not bubbly. Mix again.
  • Pour the wet ingredients onto the dry, and mix to evenly coat.
  • Spread onto a lined baking sheet and bake for a total of 20 minutes, at 325ºF, stirring half-way through.
  • Cool completely. Then, enjoy or transfer to an airtight jar/container.

Now that you have a batch of freshly made granola, here some ways to indulge in this Vanilla Almond Granola recipe.

Tips for Making this Granola Recipe Perfectly

  • Rolled oats are ideal for this recipe. I don’t recommend using quick oats, because you won’t achieve the best results. 
  • Use almond butter, made with 1 ingredient, almonds.
  • While granola is baking, be sure to keep an eye on it. Depending on your oven, the cook time might differentiate. If your oven cooks faster or your granola is browning, reduce the cook time by 2-3 minutes.
  • Don’t forget togently stir the granola, keeping the clusters intact, at the 10 minute mark. This helps ensure even baking.
  • Cool completely to achieve large clusters, before eating or transferring to an airtight jar/container.
