Oats are blended up with a few nutritious ingredients and then baked up with gooey dark chocolate chips. It’s an easy blended baked oats recipe that is vegan, gluten-free, and tastes incredibly decadent!

If you’ve never blended oats before baking them, then you’re missing out. Not to worry though, this vegan blended oats recipe will solve that problem real quick. By blending oats the end result is light, fluffy, almost like a cake texture, but tastes like dessert for breakfast, especially when you add dark chocolate chips to the mix.

This vegan blended baked oats recipe makes you feel like you’re eating cake or even chocolate chip banana bread for breakfast, but in reality you’re eating a wholesome breakfast.

It’s a blended baked oats recipe that closely resembles the taste of a warm slice of my chocolate chip banana bread recipe. With that said, it’s pretty much an individual chocolate chip banana bread in one bowl. What more could you ask for?

Vegan Blended Baked Oats Ingredients

For this vegan blended baked oats recipe, you only need a few ingredients to make your individual chocolate chip banana bread.

  • Oats: I used old fashioned rolled oats for this oatmeal recipe, but quick oats will work to. However, I do not recommend using steel cut oats, because it turns out too thick.
  • Banana: Adding half of a ripe banana to the recipe makes this breakfast sweet. Also, the more ripe the banana, the sweeter your breakfast will be.
  • Non-dairy Milk: To blend up the oats. I used unsweetened almond milk, but any non-dairy milk will work.
  • Maple Syrup: Although you do not need to add more sweetness, but maple syrup does a good job of making this oatmeal tastier.
  • Vanilla Extract: Just a little for some extra flavor.
  • Baking Powder: Since this is an egg-free blended oats recipe, baking powder will help insure a nice and fluffy texture.
  • Flaxseeds: Flaxseeds are loaded with nutrients, high in omega-3 fats, rich in dietary fiber, and you can’t even taste them. They are completely optional, and be substituted with chia seeds, so no problem if you don’t have them…yet!
  • Dark Chocolate Chips: It wouldn’t be chocolate chip banana bread without any chocolate chips. Adding dark chocolate chips, takes this blended baked oats to whole new level.

How to make Vegan Blended Baked Oats

This blended baked oatmeal is so simple, it only requires three steps: blend, mix, and bake.

  • Bake: Transfer into a greased ramekin, top with additional dark chocolate chips and a few slices of banana. Bake at 350ºF for 25 minutes and enjoy!

Although I have not tried it myself, I think it would work! Follow steps 1 and 2, but microwave for 2-3 minutes, until toothpick comes out clean.

What type of baking dish to use?

I used an 8 oz ramekin, but any oven-safe dish will work.

Can I double this recipe?

Absolutely! Just double the amount of ingredients and make multiple servings at once!

Can I make it in advance?

Blended baked oats is a great option for meal prep. Once baked, cooled, and covered, you can either store it in the fridge for 4-5 days or in the freezer for 1-2 months.

  • Fridge: Microwave for 30-45 seconds or place back into the oven at 350ºF for 10 minutes.
  • Freezer: Microwave for 60 seconds or place back into the oven at 350ºF for 15 minutes.
